Black Forest Tiramisu

Ingredients
- 500 g mascarpone
- 5 fresh eggs (with yolks and whites separated)
- 100 g sugar
- 300 g ladyfingers
- 250 g pitted cherries (fresh, canned or in spirit)
- 200 ml cherry juice or kirsch (cherry liqueur)
- Unsweetened cocoa powder to taste
- Dark chocolate shavings to taste
- One bar of dark chocolate
Preparation
- First, prepare the mascarpone cream. Beat the egg yolks with the sugar until you obtain a light and frothy mixture. Add the mascarpone and stir gently until you reach a smooth and homogeneous consistency.
- In another bowl, whip the egg whites to stiff peaks and then gently fold them into the mascarpone mixture to obtain a soft and airy cream.
- Dip the ladyfingers in the cherry juice or kirsch, being careful not to soak them too much.
- Arrange a layer of ladyfingers on the bottom of a baking dish.
- Add a layer of mascarpone cream and distribute half of the pitted cherries.
- Create a second layer with the soaked ladyfingers and cover with the remaining mascarpone cream.
- Decorate the surface with the remaining cherries and finish with a dusting of unsweetened cocoa powder and dark chocolate shavings.
- Melt the bar of dark chocolate in a double boiler and use the melted chocolate to create decorative drizzles on the surface of the tiramisu.
- Let the tiramisu rest in the fridge for at least 3-4 hours before serving.
