Blueberry Ice Cream Cake

Ingredients

For the base: - 200 g of dry biscuits (like Digestive)
- 100 g of melted butter

- 250 g of mascarpone
- 200 g of powdered sugar
- 300 g of fresh blueberries (you can also use frozen if fresh ones are not available)
- Juice of 1 lemon

Preparation

Prepare the base: - Grind the biscuits until you get a consistency similar to sand. You can do this with a mixer or by placing the biscuits in a food bag and rolling a rolling pin over them.
- Mix the ground biscuits with the melted butter until you obtain a homogeneous mixture.
- Line a springform pan (or ice cream cake mold) with parchment paper and press the biscuit mixture on the bottom, forming an even layer. Refrigerate to harden for about 30 minutes.

Prepare the ice cream mixture: - In a bowl, whip the cream until it is frothy and firm.
- In another bowl, work the mascarpone with the powdered sugar until you get a smooth mixture.
- Gently fold the whipped cream into the mascarpone, with movements from the bottom up to avoid deflating the cream.
- Add the previously blended blueberries (leave some whole aside for decoration) and lemon juice to the cream and mascarpone mixture, and mix well.

Assemble the cake: - Pour the ice cream mixture onto the hardened biscuit base.
- Level the surface with a spatula and put in the freezer for at least 4 hours, or until the ice cream has solidified well.
 
- 
Decorate the cake: - Before serving, remove the cake from the freezer and let it rest for a few minutes at room temperature to facilitate cutting.
- Decorate with fresh blueberries and, if you wish, some mint leaves for a touch of color and freshness.
