Cake with Chocolate Mousse Heart

Ingredients
For the cake base:
- 200 g dry biscuits (Digestive type)
- 100 g melted butter
For the chocolate mousse:
- 200 g dark chocolate
- 3 eggs (yolks and whites separated)
- 50 g sugar
- 200 ml fresh cream
For the topping:
- 100 g dark chocolate
- 100 ml fresh cream

Start by finely crushing the dry biscuits. Mix them with the melted butter until you obtain a homogeneous mixture. Spread this mixture on the base of a springform pan, previously lined with parchment paper, pressing well to create a compact layer. Place in the refrigerator to set.

Prepare the chocolate mousse. Melt the chocolate in a bain-marie and let it cool slightly. In a bowl, beat the yolks with the sugar until you obtain a frothy and pale mixture. In another bowl, whip the egg whites to stiff peaks. Finally, whip the fresh cream separately.

Gently fold the melted chocolate into the beaten yolks. Then add the whipped cream and, finally, the stiff egg whites, mixing from the bottom up to avoid deflating the mixture.

Pour the mousse over the set biscuit base and level the surface. Place in the refrigerator for at least 4 hours, or better yet, overnight.

For the topping, melt the dark chocolate with the cream in a bain-marie and let it cool slightly. Then pour it over the cake, drawing concentric circles. Use a spatula or the back of a spoon to create a decorative effect.
