  • 250 g boiled and mashed potatoes
  • 200 g sugar
  • 150 g 00 flour
  • 50 g unsweetened cocoa powder
  • 100 g soft butter
  • 3 eggs
  • 1 packet baking powder
  • 1 pinch of salt
  • Powdered sugar (for decoration)
  • Butter and flour for greasing and flouring the pan

Preparation

  1. Start by boiling the potatoes, peel them and then mash them until you obtain a smooth puree.
  2. Preheat the oven to 180 °C and prepare a cake pan by greasing and flouring the surface.
  3. In a bowl, cream the soft butter with the sugar until you have a fluffy mixture.
  4. Separate the egg whites from the yolks and add the yolks one at a time to the butter and sugar mixture, continuing to mix.
  5. Incorporate the potato puree into the mixture and stir well.
  6. In a separate bowl, sift together the flour, cocoa, baking powder and a pinch of salt.
  7. Add the dry ingredients to the potato mixture, stirring gradually to avoid lumps.
  8. In another bowl, whip the egg whites to stiff peaks and gently fold them into the mixture using a spatula with bottom-to-top movements to avoid deflating it.
  9. Pour the batter into the prepared pan and bake for about 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  10. Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
  11. Before serving, dust the surface with powdered sugar.
