Coffee and Chocolate Ciambellone

Ingredients
- 200 g of sugar
 - 3 eggs
 - 100 ml of vegetable oil
 - 100 ml of cold espresso coffee
 - 300 g of all-purpose flour
 - 50 g of unsweetened cocoa powder
 - 1 packet of baking powder
 - 100 g of dark chocolate chunks or chips
 - A pinch of salt
 - Icing sugar for decoration (optional)
 
Preparation
- Preheat the oven to 180 °C and grease and flour a ciambellone pan.
 - In a large bowl, whisk the eggs with the sugar until the mixture is light and fluffy.
 - Add vegetable oil and cold espresso coffee, continuing to mix.
 - In another bowl, sift the flour with the cocoa powder, baking powder, and a pinch of salt.
 - Slowly incorporate the dry ingredients into the wet mixture, mixing gently to avoid forming lumps.
 - Add the dark chocolate chunks (or chips) and stir with a wooden spoon or spatula to distribute them evenly.
 - Pour the batter into the prepared pan and level with a spatula.
 - Bake for about 35-40 minutes or until a toothpick inserted into the center of the ciambellone comes out clean.
 - Allow the ciambellone to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
 - If desired, before serving, dust the ciambellone with icing sugar.
