Corn Fritters

Corn fritters are a simple and tasty dish that can be served as an appetizer or as a side. Here’s how you can make them:

Ingredients

  • 200 g corn flour
  • 100 g 00 flour
  • 2 eggs
  • 150 ml milk
  • 100 g grated cheese (pecorino or parmesan)
  • 1 packet baking powder for savory dishes
  • Salt to taste
  • Pepper to taste
  • Oil for frying
  • (Optional) A pinch of aromatic herbs to taste (for example, chopped parsley)

Preparation

  1. In a large bowl, mix the corn flour with the 00 flour and the baking powder.
  2. Add the eggs and mix again until you obtain a homogeneous batter.
  3. Gradually incorporate the milk, continuing to stir to avoid lumps.
  4. Add the grated cheese, salt, pepper, and, if desired, the aromatic herbs.
  5. Mix all the ingredients well until you obtain a batter similar to a slightly thick one.
  6. Let the batter rest for about ten minutes.
  7. Meanwhile, heat plenty of oil in a pan.
  8. When the oil is very hot, fry small amounts of the batter at a time, using a spoon to give the fritters a round shape. They should puff up slightly and turn golden.
  9. Drain the fritters on paper towels to remove excess oil.
  10. Serve the corn fritters hot to best appreciate their flavor.

You can accompany the fritters with a spicy tomato sauce or a cheese cream to add an extra touch of flavor.

Corn fritters have peasant origins and are widespread in many Italian regional variants, where they are also called ā€œpolentineā€ or ā€œpanelleā€ depending on the area. These fritters are a great way to use corn flour creatively and differently from classic polenta.
