Couscous Pancakes

Couscous pancakes are an unusual and creative variant of traditional pancakes. Here is a basic recipe that can be customized with additions of your choice, such as fresh fruit or dried fruit:

Ingredients

  • 1 cup of cooked and cooled couscous
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup of flour (you can use whole wheat flour or another flour of your choice)
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 1 teaspoon of sugar (optional)
  • Butter or oil for greasing the pan

Preparation

  1. In a medium bowl, beat the eggs with the milk.
  2. Add the cooked couscous to the egg and milk mixture and stir well.
  3. In another bowl, combine the flour, baking powder, salt, and sugar (if using).
  4. Add the dry ingredients to the couscous and egg mixture and stir until you obtain a homogeneous batter.
  5. Heat a non-stick pan over medium heat and, once hot, lightly grease with butter or oil.
  6. Pour a small amount of batter into the hot pan and cook until bubbles start to form on the surface of the pancake and the edges appear set.
  7. Flip the pancake with a spatula and cook the other side until golden.
  8. Repeat with the remaining batter, greasing the pan as needed.
  9. Serve the pancakes warm with your favorite topping, such as maple syrup, honey, jam, yogurt, or fresh fruit.
