Creamy Chocolate and Ricotta Cake

Ingredients
- 250 g ricotta
- 200 g dark chocolate
- 100 g sugar
- 3 eggs
- 50 g flour
- 1 packet of vanillin or one teaspoon of vanilla extract
- A pinch of salt
Preparation
- Preheat the oven to 180 °C.
- Break the dark chocolate into pieces and melt it in a double boiler or in the microwave, being careful not to burn it.
- In a bowl, beat the ricotta with the sugar and vanillin until you obtain a smooth and homogeneous mixture.
- Separate the egg yolks from the whites. Add the yolks to the ricotta mixture and mix well.
- Add the melted chocolate to the mixture and stir until fully incorporated.
- In another bowl, whip the egg whites to stiff peaks with a pinch of salt until you achieve a foamy and firm consistency.
- Gently fold the whipped egg whites into the ricotta and chocolate mixture, taking care not to deflate them.
- Add the sifted flour and mix gently.
- Pour the batter into a pan lined with parchment paper or greased and floured.
- Bake for about 30-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool before removing it from the pan.
