Creamy Dark Chocolate Cake

Ingredients

  • 200 g of good quality dark chocolate
  • 150 g of butter
  • 100 g of granulated sugar
  • 50 g of flour
  • 3 whole eggs
  • 1 packet of vanillin or a teaspoon of vanilla extract
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Break the dark chocolate into pieces and melt it in a double boiler together with the butter, being careful not to overheat the mixture. You can also melt it in the microwave in 20-second intervals, stirring between each, until completely melted.
  3. In a separate bowl, beat the eggs with the granulated sugar and the pinch of salt. Work them until you obtain a puffy and foamy mixture.
  4. Add the vanillin (or vanilla extract) to the egg and sugar mixture.
  5. Gently incorporate the melted chocolate and butter into the egg mixture, stirring from the bottom up to avoid deflating it.
  6. Finally, sift the flour over the mixture and combine everything with gentle movements to preserve the air in the batter and ensure the creaminess of the cake.
  7. Pour the batter into a buttered and floured cake pan or lined with parchment paper.
  8. Bake the cake and cook for about 20-25 minutes (the center should remain slightly moist to achieve that typical creamy texture).
  9. Let the cake cool before unmolding it.

This creamy dark chocolate cake can be served with a dusting of powdered sugar, accompanied by whipped cream or vanilla ice cream. For an Italian twist, you could add a handful of pine nuts or chopped hazelnuts to your batter for a crunchy touch.
