Grilled Sausages with French Fries and Sautéed Vegetables
17/11/2023The combination of grilled sausages, french fries, and sautéed vegetables is a classic that many enjoy. I’ll describe how to prepare each component of the dish.
Ingredients
For the grilled sausages:
- 4 quality sausages (preferably pure pork or veal)
- Hot dog buns (optional, we can make an Italian version without bread)
For the french fries:
- 4 medium-sized potatoes
- Seed oil for frying
- Fine salt
For the sautéed vegetables:
- 1 zucchini
- 1 red bell pepper
- 1 carrot
- Extra virgin olive oil
- Salt and pepper
- Garlic (optional)
- Aromatic herbs (basil, parsley or thyme)
Preparation
Grilled sausages:
- Preheat the grill to medium-high temperature.
- Lightly score the sausages with a knife, making small diagonal notches on the surface. This will help them cook evenly.
- Place the sausages on the grill and cook them for about 4-5 minutes total, turning them occasionally to achieve even browning.
French fries:
- Peel the potatoes and cut them into sticks of the desired size.
- Rinse the cut potatoes in cold water to remove excess starch and dry them well with a clean cloth or paper towels.
- Heat the oil in a deep fryer or deep pan to about 180 °C.
- Fry the potatoes in small batches until they become golden and crispy.
- Drain the fries on paper towels and salt them while still hot.
Sautéed vegetables:
- Wash and cut the vegetables into pieces or strips.
- Heat a drizzle of olive oil in a large pan and add the vegetables.
- Sauté over high heat for a few minutes, disturbing them as little as possible to allow them to caramelize slightly.
- Adjust with salt and pepper, and if you like, you can add a bit of garlic and aromatic herbs at the end of cooking.
