Lemon Mousse Cake
17/11/2023I can provide you with a recipe for a delicious Lemon Mousse Cake with an Italian touch. The lemon mousse cake is a fresh and light dessert, perfect for concluding a meal or for a greedy break during the day.
Ingredients
-
For the biscuit base:
- 200 g dry biscuits (Digestive type)
- 100 g melted butter
-
For the lemon mousse:
- 4 organic lemons (juice and grated zest)
- 4 eggs (yolks and whites separated)
- 120 g sugar
- 8 g gelatin sheets
- 250 ml whipping cream
-
For decoration:
- Thin lemon slices
- Fresh mint
- Powdered sugar (optional)
Preparation
-
Start with the biscuit base: finely crush the dry biscuits and mix them with the melted butter. Press the mixture onto the bottom of a springform pan (about 22-24 cm diameter) lined with parchment paper, forming an even layer. Refrigerate for at least 30 minutes.
-
For the lemon mousse: soak the gelatin sheets in cold water for 10 minutes. In a bowl, whisk the egg yolks with the sugar until light and fluffy. Add the juice and zest of the organic lemons.
-
Heat a small portion of the yolk and lemon mixture over medium heat without bringing it to a boil. Squeeze the soaked gelatin to remove excess water and add it to the warm mixture, stirring until fully dissolved.
-
Incorporate the dissolved gelatin into the remaining yolk and lemon mixture. Let it cool.
-
Whip the cream and, in another bowl, beat the egg whites to stiff peaks. Gently fold first the whipped cream and then the beaten egg whites into the lemon cream.
-
Pour the mousse over the cooled biscuit base and refrigerate for at least 4 hours, preferably overnight.
-
Before serving, decorate the lemon mousse cake with fresh lemon slices, mint leaves, and, if desired, a dusting of powdered sugar.
Trivia
The Lemon Mousse Cake pairs perfectly with the tradition of Italian spoon desserts, light and citrusy. The contrast between the crunchy base and the soft mousse makes this dessert a pleasure for the palate.
For an even more Italian touch, you could add a splash of limoncello to the mousse to intensify the lemon flavor. Remember, however, that limoncello is alcoholic, so consider your audience before incorporating it into the recipe. Enjoy!
