Pasta with Peppers and Tuna

- 320 g of pasta (spaghetti, penne or as preferred)

Preparation
- Start by washing the peppers, then cut them into strips or cubes, as you prefer.
- Sauté the peeled garlic in a pan with a drizzle of extra virgin olive oil. If you like, you can add a whole or chopped chili pepper to give a spicy touch to the dish.
- Add the cut peppers to the pan and cook over medium-low heat, covering with a lid for about 15-20 minutes. Check occasionally and, if necessary, add a little water to prevent them from sticking.
- Meanwhile, cook the pasta in plenty of salted water following the times indicated on the package to achieve al dente cooking.
- Drain the tuna from the preserving oil and flake it with a fork.
- When the peppers are soft and cooked, add the flaked tuna to the pan and sauté everything to blend the flavors for a couple of minutes.
- Drain the pasta and reserve a cup of the cooking water.
- Add the pasta to the pan with the peppers and tuna, mix well and, if needed, add a bit of the reserved cooking water to make the sauce creamier.
- Serve immediately, garnishing with fresh chopped parsley if desired.
