Pasta with Pumpkin

Ingredients
- 320 g pasta (pappardelle, tagliatelle, or a short pasta such as penne or rigatoni)
- 400 g pumpkin, already cleaned
- 1 small onion
- 2 garlic cloves
- Extra-virgin olive oil
- Salt and pepper to taste
- Grated Parmesan
- (Optional) Chopped parsley or fresh rosemary
- (Optional) Chili flakes
- (Optional) Pancetta or sausage, if you want to add a smoky note
Preparation
- Cut the pumpkin into small cubes to allow for more even and quicker cooking.
- Finely chop the onion and garlic.
- In a large skillet, heat a drizzle of oil and sauté the onion and garlic mixture until translucent.
- Add the pumpkin cubes to the skillet and let them cook gently, adding a little water if needed to prevent sticking. You can also cover with a lid to speed up cooking.
- Meanwhile, in a pot of generously salted water, cook the pasta until al dente.
- When the pumpkin is soft, mash some cubes with a fork to create a cream that will flavor the pasta. If you chose to use fresh herbs, add them now.
- Drain the pasta, reserving some of the cooking water. Add the pasta to the skillet with the pumpkin and stir well to combine.
- If the mixture looks too dry, add a little cooking water to achieve a creamy consistency.
- Serve hot, garnished with grated Parmesan and, if desired, a sprinkle of fresh parsley or rosemary.
Optionally, if you want a richer, more flavorful touch, you can sauté some pancetta or sausage together with the onion before adding the pumpkin.
