Pistachio Cream
17/11/2023Pistachio cream is a sweet and versatile sauce that can be used in many ways, from a spread for bread and croissants to an ingredient for filling cakes and pastries. Here is the recipe to prepare a delicious pistachio cream.
Ingredients
- 150 g unsalted and peeled pistachios
- 100 g powdered sugar
- 50 g unsalted butter
- 120 ml milk (you can also use almond milk for a lactose-free version)
- 1 pinch of salt

Preheat the oven to 150 °C and toast the pistachios for about 10-15 minutes. This will help enhance their flavor.

Once the pistachios have cooled slightly, transfer them to a food processor and chop them finely.

Add the powdered sugar and the pinch of salt to the chopped pistachios and continue blending until you obtain a paste.

Add the butter cut into pieces and continue mixing.

Heat the milk until it is lukewarm, then gradually pour it into the pistachio mixture, continuing to blend until you obtain a smooth and homogeneous cream.

If the cream appears too thick, you can add a little milk until you reach the desired consistency.

Transfer the cream to a jar and let it cool completely before using it.
You can store the pistachio cream in the refrigerator for 1 week in an airtight container.
