Pistachio Involtini Skewers

Ingredients
- 500 g of meat slices (beef, veal or pork, depending on preferences)
- 100 g of unsalted pistachios
- 2 garlic cloves
- Sicilian pecorino to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Toothpicks or wooden skewers

Meat Preparation: Start by pounding the meat slices with a meat mallet until thin. Then cut them into strips about 5 cm wide.

Stuffing: Coarsely chop the pistachios and thinly slice the pecorino. Take the meat strips and on each one place a teaspoon of chopped pistachios and some pieces of pecorino. Season with salt and pepper to taste.

Rolling the Involtini: Roll each stuffed meat strip onto itself to form rolls and secure them with a toothpick.

Cooking: Heat a pan with a drizzle of oil and a clove of garlic. When the oil is hot, remove the garlic and add the rolls to cook. Brown them well on all sides until the meat is cooked and the surface is nicely golden. At this point, you can remove the toothpicks and thread the rolls onto the wooden skewers.

Finishing: Return the skewers to the pan for a few minutes to blend the flavors and serve hot.
