Pistachio Lasagne

Ingredients

  • 250 g egg lasagne (preferably fresh)
  • 200 g unsalted pistachios
  • 300 g béchamel
  • 200 g sheep’s milk ricotta
  • 100 g grated Parmesan
  • Salt and pepper to taste
  • Extra virgin olive oil
  • A few chopped pistachios for garnish

Preparation

  1. Prepare the béchamel to a rather liquid consistency and let it cool.
  2. Meanwhile, finely chop the pistachios in a food processor until you obtain a cream. You may need to add a little extra virgin olive oil to help with the chopping.
  3. Mix the pistachio cream with the ricotta until you get a homogeneous mixture. Season with salt and pepper to taste.
  4. Boil the egg lasagne in salted boiling water for a few minutes, until al dente. Drain and lay them on a clean cloth to dry.
  5. In a baking dish, spread a thin layer of béchamel and cover with a first layer of lasagne.
  6. Spread some of the pistachio and ricotta mixture and then sprinkle with grated Parmesan.
  7. Continue alternating layers of lasagne, béchamel, pistachio and ricotta mixture and Parmesan, finishing with a final layer of béchamel and a generous dusting of Parmesan.
  8. Bake in a preheated oven at 180 °C for about 20-25 minutes or until the surface is golden and crispy.
  9. Let rest for a few minutes before serving. Garnish with additional chopped pistachios for a final crunchy and flavorful touch.
