- 1 roll of rectangular puff pastry
- 250 g sausages (about 4-5 sausages, depending on size)
- 200 g potatoes
- 150 g grated cheese (such as fontina, scamorza, or a mix of cheeses to taste)
- Salt and pepper to taste
- Chopped rosemary to taste (optional)
- 1 egg (for brushing)
- Sesame or poppy seeds (for decoration, optional)
Preparation

- Peel the potatoes, cut them into very small cubes and boil them in salted water until tender but still firm. Drain and let cool.
- Meanwhile, slice the sausages into rounds or cubes, according to your preference.
- Roll out the puff pastry on a baking tray lined with parchment paper.
- Spread the boiled potatoes over the surface of the pastry, leaving a free margin along the edges.
- Add the sausages on top and sprinkle everything with the grated cheese. If desired, add a pinch of chopped rosemary for a more intense aroma.
- Roll the puff pastry onto itself starting from the longer side, sealing the edges well. For a more rustic presentation, you can also fold the pastry like a book, alternating layers of potatoes, sausages, and cheese.
- Beat the egg in a bowl and brush the surface of the pastry to give it a nice golden color.
- Sprinkle with sesame or poppy seeds to add a crunchy and decorative touch.
- Bake for about 20-25 minutes or until the pastry is golden and crispy.
- Once ready, let it cool slightly for a few minutes before slicing and serving.
