Ingredients
- 2 grilled or roasted chicken breasts
- 150 g of mixed salad (arugula, lettuce, spinach)
- 200 g of cherry tomatoes, halved
- 1 red bell pepper, grilled and cut into strips
- 1 red onion, thinly sliced
- 100 g of black olives, pitted
- 50 g of Parmigiano flakes
- 2 tablespoons of toasted pine nuts
- 2 tablespoons of balsamic vinegar
- 4 tablespoons of extra-virgin olive oil
- Salt and pepper to taste
- (Optional) Aromatic herbs like basil or oregano for garnish
Preparation
- 
Start by cutting the cooked chicken breasts into strips or cubes, according to your preference.

Wash and dry the salad, then arrange it in a large bowl or serving dish.

Add the halved cherry tomatoes, grilled red bell pepper, and thinly sliced red onion.

Add the black olives and evenly distribute the cut chicken over the salad.

Sprinkle the Parmigiano flakes and toasted pine nuts over the other ingredients.
