Onion and Gruyère PDO Savory Tart

Ingredients
- 1 roll of brisée or ready-to-use puff pastry
 - 500 g of white onions
 - 1 tablespoon of extra virgin olive oil
 - 1 tablespoon of butter
 - 200 g of Gruyère PDO, grated
 - 3 eggs
 - 200 ml of fresh cream
 - Salt and black pepper to taste
 - Grated nutmeg, to preference
 - 1 pinch of sugar (optional)
 
Preparation
- Preheat the oven to 180°C.
 - Peel and thinly slice the onions.
 - In a large pan, heat the oil and butter. Add the onions, a pinch of salt, and if desired, a pinch of sugar to promote caramelization.
 - Let the onions wilt over medium-low heat until they are golden and soft, stirring occasionally. This process may take about 20-25 minutes.
 - Meanwhile, lay the brisée pastry in a previously greased tart pan or lined with parchment paper, prick the bottom with a fork, and blind bake (covering it with parchment paper and dried beans or specific pastry weights) for about 10 minutes.
 - In a bowl, beat the eggs with the cream. Add the grated Gruyère, a pinch of salt, black pepper, and nutmeg. Mix well to obtain a homogeneous mixture.
 - When the onions are ready, distribute them evenly over the brisée pastry base.
 - Pour the egg and cream mixture over the onions.
 - Bake the savory tart for about 30-35 minutes or until the surface is golden brown and the filling has set.
 - Remove from the oven and let it cool slightly before serving.
