Sour Cherry Semifreddo

Ingredients

  • 200 g sour cherries in syrup
  • 3 egg yolks
  • 100 g sugar
  • 250 ml fresh whipping cream
  • 100 ml sour cherry syrup
  • Crumbled amaretti cookies to taste for the base

Preparation

  1. In a small saucepan, heat the sour cherry syrup until it thickens slightly. Then let it cool.
  2. In a bowl, beat the egg yolks with the sugar until the mixture is light and fluffy. You can use electric beaters or a stand mixer.
  3. In another bowl, whip the cream until stiff peaks form.
  4. Gently fold the whipped cream into the egg yolk and sugar mixture, taking care not to deflate it.
  5. Add the cooled sour cherry syrup to the mixture and stir gently.
  6. Line a loaf pan with plastic wrap, then sprinkle the bottom with crumbled amaretti cookies.
  7. Pour half of the mixture over the amaretti, add a layer of sour cherries in syrup, and cover with the remaining mixture.
  8. Smooth the surface and sprinkle with another layer of crumbled amaretti. Cover the pan with plastic wrap and freeze for at least 4-6 hours.
  9. Before serving, remove the semifreddo from the freezer and let it rest at room temperature for about 10 minutes. Then, unmold the semifreddo onto a serving plate and garnish with more sour cherries in syrup.

For an authentic Italian touch, I recommend garnishing the semifreddo with dark chocolate shavings or a dusting of cocoa powder to enhance the flavor of the sour cherries and add a crunchy texture that contrasts with the softness of the dessert.
