Spring Cake

The Spring Cake is a dessert that evokes the flavors and colors of the awakening season. There is no standard recipe for a “Spring Cake”, as the term can refer to various cake variants that use spring ingredients. However, I can suggest a version that celebrates spring with fresh fruit and a soft base, ideal for a light and fragrant dessert. Let’s take a look at one possible interpretation of this cake.

Ingredients

  • 200 g flour
  • 200 g sugar
  • 4 eggs
  • 1 packet baking powder
  • Grated zest of 1 untreated lemon
  • A pinch of salt
  • 250 g mascarpone
  • Fresh seasonal fruit (strawberries, kiwi, blackberries, raspberries, etc.)
  • Powdered sugar (for decorating)

Preparation

  1. Preheat the oven to 180 °C.
  2. Separate the egg yolks from the whites.
  3. Beat the yolks with half the sugar until you obtain a light and frothy mixture.
  4. Add the grated lemon zest to the yolk mixture.
  5. Whip the egg whites to stiff peaks with a pinch of salt and gradually add the remaining sugar until you obtain a glossy and firm meringue.
  6. Gently fold the whipped egg whites into the yolk mixture, alternating with the sifted flour and baking powder, taking care not to deflate the mixture.
  7. Pour the batter into a previously buttered and floured pan or lined with parchment paper.
  8. Bake for about 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  9. Let the cake cool completely on a wire rack.
  10. Meanwhile, wash and cut the fresh fruit as desired.
  11. When the cake is cold, spread a layer of mascarpone over the surface.
  12. Decorate the cake with the sliced fresh fruit and dust with powdered sugar before serving.
