Ingredients
- 1 roll of rectangular puff pastry
- 500 ml whole milk
- 4 egg yolks
- 100 g granulated sugar
- 40 g 00 flour
- 1 vanilla bean or vanilla extract
- Fresh strawberries (as needed)
- Powdered sugar (for decoration)
Preparation
- Start by preparing the pastry cream. In a bowl, beat the egg yolks with the sugar until you obtain a light and frothy mixture. Add the sifted flour and mix well.
- Split the vanilla bean lengthwise and scrape out the seeds inside, or use vanilla extract. Heat the milk with the vanilla in a saucepan until just about to boil.
- Gradually pour the hot milk over the beaten yolks, stirring continuously to prevent the eggs from cooking. Transfer everything back to the saucepan and cook over low heat, stirring constantly until the cream thickens.
- Once ready, transfer the cream to a bowl, cover it with plastic wrap pressed directly onto the surface to prevent a skin from forming, and let it cool completely.
- Preheat the oven to 200 °C.
- Roll out the puff pastry and cut it into squares or rectangles of your preferred size.
- Arrange the puff pastry pieces on a baking tray lined with parchment paper and prick them with a fork to prevent excessive rising. Bake for about 10-15 minutes or until golden.
- Once the puff pastry has cooled, slice each piece horizontally to create two layers.
- Wash and slice the strawberries.
- Assemble the pastries by spreading a layer of pastry cream and strawberries on the bottom puff pastry layer and covering with the second layer.
- Dust with powdered sugar before serving.
