Trifle
17/11/2023Trifle is a traditional English dessert composed of layers of sponge cake soaked in sherry or other liqueur, fruit, custard and whipped cream. However, given my love for Italian cuisine, I can suggest an Italianized version of the traditional recipe.
Ingredients for the Italian version of Trifle:
- Sponge cake: 300 g
- Amaretto liqueur: 100 ml
- Custard: 500 ml
- Fresh strawberries: 300 g
- Whipping cream: 250 ml
- Powdered sugar: 2 tablespoons
- Grated dark chocolate: for garnish
- Toasted flaked almonds: for garnish
Preparation

The sponge cake: if you don’t have ready-made sponge cake on hand, start by making it from scratch or buy one ready-made. Cut it into slices and then into cubes.

Liqueur: in a bowl mix the amaretto liqueur with a little water (or with fruit juice, if you prefer to reduce the alcohol content).

The custard: prepare a custard following your favorite recipe. If you don’t have one handy, I’ll show you how to make it later.

The fruit: wash the strawberries and cut them into slices or pieces. You can lightly sugar them if you prefer or leave them natural.

The cream: whip the cold cream with two tablespoons of powdered sugar until you obtain a firm and frothy mixture.

Assembly: start with a layer of sponge cake at the bottom of a trifle bowl or a large transparent glass jar, lightly soaked in the amaretto liqueur. Continue with a layer of custard, then one of sliced strawberries, and finally one of whipped cream. Keep layering until the container is full.

Decorate: finish with an additional layer of cream and decorate with dark chocolate shavings and toasted almonds.

Rest: let the trifle rest in the fridge for at least a couple of hours; this will allow the flavors to meld well.
Trivia
Trifle, according to tradition, is often served during the Christmas holidays in England, but its deliciousness makes it suitable for any occasion. The Italian version, with the addition of amaretto, offers a touch of flavor that pairs well with the sweetness of the fruit and cream.
