Verzini in Beer

Verzini are typical sausages from the Lombard tradition, usually cooked in simple ways to enhance their flavor. The preparation with beer is a method that enriches the taste and creates a delicious sauce. Here is the recipe to prepare verzini in beer:

Ingredients

  • 4 verzini (fresh pure pork sausages)
  • 1 onion
  • 500 ml of light beer
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste.

Preparation

  1. Start by cleaning and finely slicing the onion.
  2. Take a large pan and heat the extra virgin olive oil.
  3. Add the onion to the oil and let it sauté over medium-low heat until it becomes transparent and soft.
  4. Add the verzini to the pan with the onion and let them brown on all sides until they take on color.
  5. At this point, pour the beer over them until it covers the verzini. Bring to a boil, then reduce the heat.
  6. Let cook over low heat for about 30 minutes, until the beer has reduced forming a slightly thicker sauce.
  7. Adjust salt and pepper during cooking according to your taste.

While the verzini cook in the beer, you will have time to prepare a side dish, which could be for example oven-baked potatoes or polenta.

Trivia

In Lombardy, verzini are a dish associated with convivial and festive moments, often accompanied by mustard or other traditional sides. The beer preparation not only makes them tender, but adds a particular aroma that pairs perfectly with these sausages.

For an all-Italian touch, you can also add a bit of rosemary or sage during the cooking of the verzini for an even more inviting fragrance. And to accompany, a craft Lombard beer might be the perfect choice. Enjoy your meal!
