Zucchini Pizza

Ingredients
- 2 large zucchinis
- 200 g of flour
- 150 ml of lukewarm water
- 1 tablespoon of extra virgin olive oil
- 1/2 a packet of dry yeast or 7 g of fresh yeast
- Salt to taste
- Pepper to taste (optional)
- 200 g of mozzarella (or fiordilatte)
- Tomato sauce to taste
- Oregano to taste
- Fresh basil for garnishing (optional)
Preparation
- 
Start by grating the zucchinis, then squeeze them firmly to remove the excess water. This step is crucial to prevent the dough from becoming too moist.

In a bowl, mix the flour with the yeast. Add the grated zucchinis, oil, and lukewarm water. Knead until the mixture is homogeneous. If necessary, add more flour to reach the right consistency.

Cover the dough with a damp kitchen towel and let it rise in a warm place for about 1 hour, or until it has doubled in volume.

Preheat the oven to 200 °C (392 °F).

Roll out the dough into a disc shape on a baking tray lined with parchment paper. If the dough is sticky, use a bit of flour to help you.

Spread over a thin layer of tomato sauce, then sprinkle with salt, pepper, and oregano.

Cut the mozzarella into cubes and distribute it evenly over the zucchini base.

Bake the zucchini pizza for about 20-25 minutes or until the edges turn golden and crispy and the mozzarella has melted well.
