Apple and Jam Puff Pastries

Ingredients
- 1 roll of rectangular puff pastry
- 2 apples (preferably Golden or Fuji variety)
- 4 tablespoons of jam (for example apricot or apple)
- 1 egg yolk
- Brown sugar (to taste)
- Powdered sugar (for garnish)
- Ground cinnamon (optional)
Preparation
- Preheat the oven to 200 °C.
- Roll out the puff pastry and cut it into rectangles of about 10x15 cm.
- Peel the apples, remove the core, and slice them thinly.
- Place a tablespoon of jam in the center of each puff pastry rectangle and on top arrange the apple slices neatly, slightly overlapping them.
- If desired, dust the apples with a little cinnamon and brown sugar.
- Fold the edges of the pastry inward to contain the apples and jam.
- In a small bowl, lightly beat the egg yolk with a little water and brush the edges of the pastries to achieve a nice and even golden color during baking.
- Bake the pastries for about 20 minutes or until the puff pastry is puffed and golden.
- Let the pastries cool on a wire rack and before serving, dust them with powdered sugar.
