Arancini with Broccoli Cream and Gorgonzola
26/11/2023Arancini with broccoli cream and gorgonzola are a dish that blends the Sicilian tradition of arancini with the intense and creamy taste of gorgonzola cheese and the delicacy of broccoli. Here is the recipe to prepare this variant of the classic arancino.
Ingredients
- 300g of risotto rice (Carnaroli or Arborio type)
- 1 small onion
- Vegetable broth as needed.
- 200g of broccoli
- 150g of sweet gorgonzola
- 50g of grated parmesan
- 1 egg
- Breadcrumbs as needed.
- Flour as needed.
- Oil for frying
Preparation
- Start by preparing the risotto. Finely chop the onion and sauté it with a drizzle of oil in a large pan until it becomes translucent. Add the rice and toast it for a couple of minutes.
- Add the hot vegetable broth little by little, stirring often, until the rice is cooked but still al dente.
- Once ready, remove from the heat and incorporate the parmesan. Spread the risotto on a tray to cool it down more quickly.
- Meanwhile, clean the broccoli, cut it into florets and cook in boiling salted water for about 7-8 minutes or until tender. Drain and blend until you obtain a cream.
- Mix the broccoli cream with the crumbled gorgonzola until well combined and creamy. If necessary, use a little milk to achieve the desired consistency.
- Take some cooled rice, make a hollow and put a spoonful of broccoli and gorgonzola cream in the center, then close with more rice to form a ball. Continue until all ingredients are used up.
- Pass each arancino in the flour, then in the beaten egg and finally in the breadcrumbs, making sure they are well coated.
- In a pot, heat plenty of oil and fry the arancini until they are golden and crispy.
- Drain them on absorbent paper to remove excess oil before serving.
