Arancini with Pumpkin, Amaretti, and Provola

Ingredients for about 8-10 arancini:

Preparation
- Start by preparing a pumpkin risotto: cut the pumpkin into cubes and chop it together with the onion. In a pan, sauté the chopped onion with a bit of butter, then add the pumpkin and cook until it softens.
- Add the rice and toast it for a few minutes. Deglaze with a glass of white wine if desired, let it evaporate, and start adding the hot vegetable broth little by little, stirring occasionally.

- In three separate shallow dishes, place the beaten eggs, some flour, and breadcrumbs. Coat each arancino first in flour, then in egg, and finally in breadcrumbs, ensuring they are evenly coated.
- In a deep pan, heat plenty of oil for frying. When the oil is hot, fry the arancini until they are golden and crispy.
- Drain them on paper towels to remove excess oil and serve hot.
