Baked Potato Frittata

Ingredients

  • 6 medium eggs
  • 500g potatoes
  • 1 small onion (optional)
  • 100g grated cheese (Parmesan, Pecorino or a mix of the two)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Chopped parsley (optional)
  • Milk or water (a couple of tablespoons, optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Peel the potatoes and cut them into medium cubes of about 1 cm. If you wish to add the onion, slice it finely.
  3. Heat a drizzle of oil in a pan and cook the potatoes (and the onion if using) until golden and tender. Salt them lightly during cooking.
  4. In a large bowl, beat the eggs with a pinch of salt and pepper. Add the milk or water if you desire a fluffier texture.
  5. Add the grated cheese to the eggs and mix well.
  6. When the potatoes are ready, incorporate them into the bowl with the beaten eggs and mix gently.
  7. Pour the mixture into a baking dish lined with parchment paper or grease the dish with a little oil.
  8. Bake for about 20-25 minutes or until the surface of the frittata is golden and the inside is well cooked.
  9. Once ready, let it cool for a few minutes before cutting into wedges.
  10. If desired, before serving you can sprinkle with chopped parsley to add a touch of freshness.
