Black Cake
17/11/2023Torta Nera is a typical dessert from some Italian regions, such as Emilia-Romagna. This recipe may vary slightly based on local traditions, but here I will provide a classic version.
Ingredients
- 200 g sugar
- 150 g butter
- 150 g flour
- 100 g dark chocolate
- 100 g finely chopped almonds
- 4 eggs
- 1 packet baking powder
- A pinch of salt
- Powdered sugar (for decoration)
Preparation
- Preheat the oven to 180 °C.
- Melt the dark chocolate in a double boiler or in the microwave and let it cool.
- Cream the softened butter with the sugar in a bowl until you get a fluffy and light mixture.
- Separate the egg yolks from the whites. Add the yolks one at a time to the butter and sugar mixture, continuing to mix.
- Add the melted chocolate and chopped almonds to the mixture, stirring well.
- Incorporate the sifted flour with the baking powder, gently folding it into the mixture.
- Whip the egg whites to stiff peaks with a pinch of salt, and gently fold them into the rest of the batter, using a spatula and bottom-to-top movements to avoid deflating the mixture.
- Pour the mixture into a round cake pan (preferably springform) previously buttered and floured.
- Bake for about 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Once baked, let the cake cool before dusting it with powdered sugar.
Trivia
Torta Nera is often appreciated for its moisture and intensity of flavor, due to the presence of chocolate and almonds. It is not uncommon to find variants that include the addition of spices such as cinnamon or cloves to enrich its aroma.
Remember that black cake can be customized in many ways, for example, by adding a layer of chocolate ganache or a dusting of cocoa to further intensify the chocolate flavor.
