Black Forest Cake

The Black Forest Cake, also known as Schwarzwälder Kirschtorte in German, is a classic dessert that combines chocolate, cream, and cherries in an extraordinary balance of flavors and textures. Here is the recipe to prepare a Black Forest Cake:

Ingredients

  • 150 g flour
  • 30 g unsweetened cocoa powder
  • 200 g sugar
  • 6 eggs
  • 1 pinch of salt
  • 1 packet of baking powder
  • 500 g cherries in syrup (or fresh, if in season)
  • 3 tablespoons Kirschwasser (cherry brandy, typical of the Black Forest)
  • 500 ml fresh whipping cream
  • 2 tablespoons powdered sugar
  • Dark chocolate shavings or chocolate curls for decoration

Preparation

  1. Separate the yolks from the whites and beat the yolks with the sugar until you get a light and foamy mixture.
  2. Sift the flour with the cocoa, baking powder, and salt and add them to the yolk mixture.
  3. Whip the egg whites to stiff peaks and gently fold them into the batter with movements from the bottom up to avoid deflating the mixture.
  4. Pour the batter into a buttered and floured cake pan and bake in a preheated oven at 180 °C for about 40 minutes.
  5. Once baked, let the cake cool and then slice it horizontally into three layers.
  6. Fill the first layer with whipped cream and cherries in syrup (if using fresh cherries, pit them). Spray a little Kirschwasser on the cream before layering the second cake disc to give the typical aroma.
  7. Repeat the process for the second layer and cover with the third layer.
  8. Cover the cake with the remaining whipped cream, spreading it on the sides as well. Decorate with chocolate shavings and the remaining cherries.
  9. Store in the refrigerator until ready to serve.

Trivia

The Black Forest Cake takes its name from the mountainous region of the Black Forest, in southwestern Germany. It is said that the cake reflects the colors of the traditional costume of the women of that area, which includes a black dress like the chocolate, red ornaments like the cherries, and a white headdress like the cream.
