Ingredients
- 4 very fresh eggs (with yolks and whites separated)
- 100 g granulated sugar
- 500 g mascarpone
- 300 g ladyfingers
- 1 cup cold espresso coffee
- 1 cardamom pod (or 1/2 teaspoon ground cardamom)
- Unsweetened cocoa powder for dusting
- Salt, a pinch
Preparation
- Start by infusing the cardamom in the cold espresso coffee. If using the pod, lightly crush it and let it steep for at least 15 minutes, then remove the seeds and husk. If using the powder, you can add it directly to the coffee.
- Separate the yolks from the whites in the eggs. Make sure the eggs are very fresh since they will be consumed raw.
- Beat the yolks with the sugar until they become light and frothy.
- Add the mascarpone to the beaten yolks and mix until you have a homogeneous mixture.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the beaten egg whites into the mascarpone and yolk mixture, being careful not to deflate it.
- Take the ladyfingers and quickly dip them in the cardamom coffee, making sure not to soak them too much.
- Arrange a layer of soaked ladyfingers on the bottom of a baking dish.
- Cover the layer of ladyfingers with part of the mascarpone cream.
- Continue alternating with another layer of ladyfingers and finish with the cream.
- Place the tiramisu in the refrigerator for at least a couple of hours; it will be even better if it can rest overnight.
- Before serving, dust the surface with unsweetened cocoa powder.
