Chestnut Fritters

Ingredients
- 200 g chestnut flour
- 50 g all-purpose flour
- 250 ml milk
- 2 eggs
- 50 g sugar
- 1 packet baking powder
- A pinch of salt
- Vegetable oil for frying
- Powdered sugar for dusting
Preparation
- In a bowl, sift the flours and mix them with the sugar, baking powder, and a pinch of salt.
- Make a well in the center of the flours and add the eggs and some of the milk. Start mixing with a whisk to combine the ingredients without forming lumps.
- Add the remaining milk a little at a time, continuing to mix until you obtain a smooth batter without lumps.
- Let the batter rest for about 30 minutes.
- Heat plenty of vegetable oil in a pan. When the oil is very hot, take spoonfuls of batter and pour them into the oil.
- Fry the fritters until they become golden and puffed, turning them occasionally for even cooking.
- Drain them and place on paper towels to remove excess oil.
- Dust the chestnut fritters with powdered sugar before serving.
