Chicken and Mashed Potatoes

  • 4 chicken breasts
  • 2 tablespoons olive oil

  • 800g yellow-fleshed potatoes
  • 100ml milk

Preparation

  1. Start with the mashed potatoes: peel them and cut into uniform pieces. Cook them in plenty of salted water until tender, about 20 minutes.

  2. While the potatoes are cooking, prepare the chicken: heat the olive oil in a pan over medium-high heat. Season the chicken breasts with salt, pepper and chopped aromatic herbs. Place the chicken in the pan and cook for about 5-7 minutes per side until golden brown and cooked through (internal temperature should reach 74 °C).

  3. Add the crushed garlic cloves to the oil and drizzle with lemon juice for an extra boost to your chicken. Once cooked, remove the chicken from the heat and let it rest for a few minutes.

  4. When the potatoes are cooked, drain and mash them with a potato masher or fork. Add the butter and mix well. Heat the milk and gradually add it to the mash to reach the desired consistency. Season with salt, pepper and nutmeg to taste.

  5. Serve the hot chicken breasts with the mashed potatoes on the side.
