Chocolate and Pomegranate Cake

Ingredients

  • 200 g dark chocolate
  • 100 g butter
  • 150 g sugar
  • 3 eggs
  • 70 g flour

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Melt the dark chocolate in a double boiler or in the microwave and let it cool slightly.
  3. In a bowl, beat the softened butter with the sugar until you obtain a light and fluffy cream.
  4. Separate the yolks from the whites. Add the yolks one at a time to the butter and sugar cream, mixing well after each addition.
  5. Incorporate the melted chocolate into the butter, sugar, and egg mixture.
  6. Add the sifted flour, baking powder, and a pinch of salt, mixing gently until you obtain a homogeneous batter.
  7. In another bowl, whip the egg whites to stiff peaks and gently fold them into the mixture, using a spatula and top-to-bottom movements to avoid deflating them.
  8. Peel the pomegranate, removing the seeds and freeing them from the white membrane. Add about 2/3 of the seeds to the batter, reserving some for decoration.
  9. Pour the batter into a previously buttered and floured cake pan.
  10. Bake for about 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  11. Let the cake cool before removing it from the pan.
  12. Decorate it with the remaining pomegranate seeds and, if desired, a light dusting of powdered sugar.
