Cocoa Roll with White Chocolate Cream

Ingredients
For the cocoa roll:
- 4 eggs
- 100 g sugar
- 70 g 00 flour
- 30 g cocoa powder
- 1 pinch of salt
For the white chocolate cream:
- 200 ml fresh cream
- 200 g white chocolate
- 1 vanilla pod (or vanilla extract)
Preparation
Cocoa roll:
- Preheat the oven to 180 °C.
- In a bowl, beat the egg yolks with half the sugar until you obtain a light and fluffy mixture.
- In another bowl, whip the egg whites with the remaining sugar and a pinch of salt until stiff.
- Gently fold the beaten yolks into the whipped whites, taking care not to deflate the mixture.
- Sift the flour with the cocoa powder and incorporate them into the egg mixture, mixing from the bottom up to maintain the lightness of the batter.
- Spread the batter on a baking tray lined with parchment paper, creating an even layer about 1 cm thick.
- Bake and cook for about 8-10 minutes.
- Once baked, turn the roll out onto a damp tea towel, remove the parchment paper and roll gently. Let cool.
White chocolate cream:
- Heat the cream with the seeds from the vanilla pod until just about to boil.
- Remove from the heat and add the chopped white chocolate, allowing it to melt in the hot cream.
- Stir until you obtain a smooth and homogeneous cream.
- Let the cream cool, then place it in the fridge to firm up.
Assembly:
- Once cooled, gently unroll the cocoa roll.
- Spread an even layer of white chocolate cream over it.
- Roll the cake up again, wrapping it in plastic wrap.
- Let it rest in the fridge for at least an hour before serving.
Before serving, you can decorate the roll with dollops of whipped cream, white chocolate shavings or a light dusting of cocoa. Enjoy!
