Ingredients
- 4 cod fillets (about 200g each)
- 1 large pomegranate
- 1 garlic clove
- Extra virgin olive oil
- Salt and pepper to taste

Preparation
- Start by preheating the oven to 200 °C.
- While the oven heats up, extract the seeds from the pomegranate. You can cut the pomegranate in half and tap it with the back of a spoon to release the seeds, or cut it into wedges and remove the seeds manually.
- In a small pan, heat a drizzle of extra virgin olive oil with a garlic clove to flavor the oil. Remove the garlic as soon as it begins to turn golden.
- Add the pomegranate seeds to the oil and cook over low heat for about 5 minutes, lightly crushing them to release their juice.
- Once the seeds have released some of their juice, strain the contents of the pan through a sieve to obtain a smooth sauce. Season with salt and pepper and return the sauce to the pan over low heat to keep it warm.
- Season the cod fillets with salt and pepper, then place them in a lightly greased baking dish.
- Bake the cod for about 10-15 minutes, or until the fish is tender and flakes easily with a fork.
- Once the cod is cooked, plate each fillet and pour the warm pomegranate sauce over it.
- Garnish with chopped chives for a touch of color and freshness (if desired).
