Coffee Delight Cake

Ingredients

For the sponge cake:

  • 4 eggs
  • 120 g sugar
  • 120 g 00 flour
  • A pinch of salt

For the coffee soak:

  • 200 ml water
  • 100 g sugar
  • 2-3 tablespoons strong espresso coffee

For the coffee cream:

  • 500 ml fresh whipping cream
  • 200 g mascarpone
  • 80 g powdered sugar
  • 2-3 tablespoons cold espresso coffee
  • 1 packet vanillin or one teaspoon vanilla extract

For the topping:

  • Unsweetened cocoa powder, as needed
  • Chocolate coffee beans for decoration (optional)

Preparation

  1. Sponge cake: Start by separating the yolks from the whites. Beat the yolks with half the sugar until you obtain a light and frothy mixture. In a separate bowl, whip the egg whites to stiff peaks with a pinch of salt, gradually adding the remaining sugar. Fold the whipped whites into the yolks, alternating with the sifted flour, mixing gently from the bottom up to avoid deflating the mixture. Pour the batter into a cake pan lined with parchment paper and bake in a preheated oven at 180 °C for about 25-30 minutes. Remove from the oven and let cool completely.

  2. Coffee soak: In a saucepan, bring the water with the sugar to a boil until completely dissolved. Remove from heat and add the espresso coffee. Let cool.

  3. Coffee cream: In a bowl, whip the fresh cream with the powdered sugar and vanillin. In a separate bowl, soften the mascarpone with the cold espresso coffee, then add the whipped cream, mixing from the bottom up to maintain structure.

  4. Assembly: Cut the sponge cake into three layers. Soak the first layer with the coffee soak, then spread a generous layer of coffee cream. Place the second sponge layer on top and repeat the process. Finish with the last layer and cover the entire cake with a thin layer of coffee cream. Let rest in the fridge for at least one hour.

  5. Decoration: Before serving, dust the surface of the cake with unsweetened cocoa powder and decorate with chocolate coffee beans to your preference.
