Creamy Herb Pasta

Creamy herb pasta is a dish that relies on the freshness of aromatic herbs and the creaminess of the sauce. Here’s how to prepare this delicious first course.

Ingredients

  • 320 g of pasta (for example penne, farfalle or linguine)
  • 200 ml of cooking cream
  • A mix of fresh aromatic herbs (basil, parsley, marjoram, thyme, etc.)
  • 2 garlic cloves
  • 50 g grated Parmesan
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • (Optional) Grated lemon zest for a touch of freshness

Preparation

  1. Bring a pot of salted water to a boil and cook the pasta al dente according to the package instructions.
  2. Meanwhile, in a large skillet, heat the extra virgin olive oil and add the peeled and crushed garlic cloves. Let them brown for a couple of minutes.
  3. Remove the garlic from the skillet and lower the heat. Add the cream and let it warm without coming to a boil.
  4. Finely chop the chosen aromatic herbs and add them to the cream. Stir well to flavor the cream.
  5. Drain the al dente pasta, reserve some cooking water and add it to the skillet with the cream.
  6. Add the grated Parmesan, and mix the pasta well with the herb cream. If necessary, add a little cooking water to make everything creamier.
  7. Adjust with salt and pepper and, if you like, add a pinch of grated lemon zest to give a citrus note.
  8. Serve immediately.
