Ingredients
- Salmon fillets with skin (about 150-200 grams per person)
- Extra virgin olive oil
- Salt and pepper to taste
- Aromatic herbs to taste (such as dill or thyme)
Preparation
- Preheat the oven to 200 °C if you prefer to cook it in the oven, or prepare a non-stick pan if you choose to cook it on the stovetop.
- Pat the salmon fillets dry well with paper towels, making sure the skin is as dry as possible.
- Season the salmon with salt and pepper on both sides.
- If available, sprinkle the finely chopped aromatic herbs on the flesh side of the salmon.
- Heat the oil in a non-stick pan over medium-high heat.
- When the oil is hot, place the salmon in the pan skin-side down. Cook for about 3-5 minutes until the skin becomes crispy.
- Flip the salmon and cook for another 3-5 minutes on the flesh side or until cooked to the desired doneness. If you prefer the oven, cook the salmon skin-side down for about 12-15 minutes.
- Serve immediately.
For an Italian touch, you can serve the crispy salmon on a bed of asparagus risotto or alongside a portion of Sicilian caponata for a contrast of flavors and textures.
