Crushed Potatoes

Crushed potatoes, or “crushed potatoes” in English, are a very simple and tasty side dish. Here is the recipe to prepare them:

Ingredients

  • 4 large potatoes (preferably yellow-fleshed)
  • 2 tablespoons of extra virgin olive oil
  • 2 garlic cloves
  • Salt and pepper to taste
  • Rosemary or other aromatic herbs to taste
  • (Optional) Parmesan or other grated cheese for gratinating

Preparation

  1. Wash the potatoes well and boil them in salted water until they are soft but still firm (the time depends on the size of the potatoes, but it is around 20-30 minutes).
  2. Once cooked, drain them and let them cool for a few minutes.
  3. Arrange the potatoes on a baking tray lined with parchment paper.
  4. Using the bottom of a glass or a fork, gently press on the potatoes to crush them slightly without breaking them completely.
  5. Peel the garlic cloves and crush them lightly with the side of a knife, then arrange them on the tray along with the potatoes.
  6. Drizzle the potatoes with extra virgin olive oil, season with salt and pepper to taste.
  7. If desired, sprinkle with rosemary or chosen aromatic herbs and grated cheese.
  8. Bake in a preheated oven at 200 °C until the potatoes are golden brown and crispy on the edges, generally for about 20 minutes.
  9. Serve hot as a side dish.

Crushed potatoes can be adapted in a thousand ways: for example, they can be flavored with spices like paprika or curry, or you can add grated pecorino instead of Parmesan for a more rustic and bold touch.
