Ingredients
- 4 eggs
- 2 garlic cloves
- Fresh parsley to taste
- 4 tablespoons extra virgin olive oil
- Salt to taste
- Black pepper to taste
- (Optional) Chopped chili pepper to taste
Preparation
- Start by finely chopping the garlic and parsley. If you have decided to include the chili pepper, chop it as well.
- Heat the oil in a non-stick pan and add the garlic (and the chili pepper, if using). Let it brown over medium heat without burning the garlic.
- Once the garlic is golden, crack the eggs and pour them into the pan. Season with salt and pepper.
- Cook the eggs for a couple of minutes to get firm whites and soft yolks, or longer if you prefer a more cooked yolk.
- One minute before removing the eggs from the heat, sprinkle the chopped parsley over them.
- Serve the eggs alla carrettiera immediately while hot, directly from the pan to the plate.
