Fish Burgers

Fish burgers are an excellent alternative to more traditional meat hamburgers. Here is a simple recipe for tasty fish burgers with an Italian touch.

Ingredients

  • 500 grams of fish fillet of your choice (cod, salmon or sea bass work well)
  • 1 egg
  • 2 tablespoons of breadcrumbs
  • 2 tablespoons of grated Parmesan
  • 1 tablespoon of chopped chives
  • Grated zest of 1 lemon
  • Salt and pepper to taste.
  • Extra virgin olive oil for cooking
  • Hamburger buns
  • Lettuce, tomato and mayonnaise for garnish

Preparation

  1. Start by finely chopping the fish fillet with a knife or using a mixer, making sure not to reduce it to a puree.
  2. Transfer the minced fish to a bowl and add the egg, breadcrumbs, Parmesan, chopped chives and lemon zest. Season with salt and pepper to taste.
  3. Mix all the ingredients well until you have a homogeneous mixture. If the mixture is too wet, add more breadcrumbs until you reach the desired consistency.
  4. Divide the mixture into equal portions (depending on the size you want for your burgers) and with wet hands form flat patties, similar to hamburgers.
  5. Heat the olive oil in a non-stick pan over medium-high heat and cook the fish burgers for about 3-4 minutes per side, or until golden brown and cooked to the desired doneness.
  6. Meanwhile, prepare the buns by lightly toasting them and placing the lettuce and tomato slices on top.
  7. When the fish burgers are ready, place them on the buns and add a tablespoon of mayonnaise if desired.
  8. Close the bun with the top part and serve your fish burgers hot.

If you want to infuse a more Mediterranean spirit, you could add Genoese pesto or chopped olives to the mix for a more Italian accent.

Trivia

The choice of fish is crucial for the final flavor of the burgers. Cod will tend to give a more delicate result, while salmon or sea bass are more flavorful and can give the burgers a bolder and richer taste.
