Green Frittata Tagliatelle with Mushrooms and Speck

Ingredients

  • 100 g speck, sliced very thinly
  • 1 garlic clove

  • Grated Parmesan, to taste.

Preparation

  1. Start by preparing the green frittatas. Clean and wash the spinach or chosen herbs and cook them quickly in a pan with a drizzle of oil and a garlic clove. Once wilted, blend them with a mixer and let cool.
  2. Beat the eggs in a bowl, then add the blended spinach or herbs. Season with salt, pepper and a pinch of nutmeg.
  3. Lightly grease a non-stick pan and pour in a ladle of the mixture, spreading it evenly to obtain a thin frittata. Cook for a few minutes per side until golden, then place the frittatas on paper towels.
  4. Once cooled, cut the frittatas into strips as wide as tagliatelle and set aside.
  5. Clean and slice the mushrooms, then sauté them in a pan with a drizzle of oil and a garlic clove. Add the speck slices cut into strips until crispy.
  6. Add the frittata “tagliatelle” to the pan with the mushrooms and speck, stirring gently to let the flavors combine.
  7. Plate and, if desired, sprinkle with plenty of grated Parmesan before serving.
