Green Pasta with Shrimp

Ingredients
- 320 g of pasta (spaghetti, linguine or tagliatelle work great)
- 200 g of already cleaned shrimp
- 1 bunch of parsley
- 1 bunch of basil
- 2 cloves of garlic
- Extra virgin olive oil to taste
- Salt and pepper to taste
- 1/2 glass of white wine
- Grated zest of 1 lemon (optional for a fresh touch)

In a large pan, sauté the finely chopped garlic in a little extra virgin olive oil. It is important that the garlic does not take on too much color but only becomes slightly golden.

Add the shrimp and quickly brown them, then deglaze with the white wine and let the alcohol evaporate. Adjust salt and pepper.

Meanwhile, cook the pasta in plenty of salted water following the times indicated on the package to have it al dente.

Once the necessary time has passed, finely chop the parsley and basil. If you wish to add a touch of freshness, you can also include the grated lemon zest.

Drain the al dente pasta and transfer it to the pan with the shrimp, adding the chopped herbs (and the lemon zest if used). Toss quickly over the heat to combine the ingredients.

Serve immediately, plating with a drizzle of extra virgin olive oil raw and, if you like, an additional sprinkle of pepper or chili.
