Homemade Yo-Yo Snacks

Ingredients
For the batter:
- 3 eggs
- 150 g of sugar
- 1 pinch of salt
- 150 g of 00 flour
- 1/2 packet of baking powder
- Grated zest of one lemon (optional)
For the filling:
- 200 g of mascarpone
- 50 g of powdered sugar
- 1 teaspoon of vanilla extract (or the seeds of a vanilla bean)

Prepare the batter for the snacks.
- Preheat the oven to 180 °C.
- Separate the yolks from the whites. Whip the whites to stiff peaks with a pinch of salt.
- In another bowl, whip the yolks with the sugar until you get a swollen and frothy mixture.
- Add the grated lemon zest to flavor, if desired.
- Add to the yolk and sugar mixture the sifted flour with the baking powder, incorporating it gently with a spatula.
- Finally, incorporate the whipped egg whites, mixing from the bottom up so as not to deflate the mixture.

Bake the snacks.
- Distribute the batter in a muffin tin or in paper liners, filling them about two-thirds full.
- Bake for about 15-20 minutes or until the snacks are golden and soft to the touch.
- Let cool completely before filling them.

Prepare the cream for the filling.
- Work the mascarpone with the powdered sugar and vanilla extract until you get a homogeneous and smooth cream.

Assemble the yo-yo snacks.
- Cut each snack in half horizontally.
- Spread a generous amount of mascarpone cream on the base of each snack.
- Cover with the other half of the snack and dust with powdered sugar if desired.
