Ingredients

  • 2 chicken breasts
  • 150 g mixed salad (lettuce, arugula, radicchio, etc.)
  • 150 g cherry tomatoes
  • 1 teaspoon dried oregano
  • 50 g Taggiasca olives (or another type of Italian olive of your preference)
  • 100 g buffalo mozzarella (cut into cubes or torn)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Balsamic vinegar or lemon juice for dressing
  • Fresh basil for garnish

Preparation

  1. Start by cooking the chicken breasts. You can grill them, cook them in a pan with a drizzle of oil, or boil them. If you choose to grill or pan-cook them, season them first with salt, pepper, and oregano to flavor them.

  2. Once cooked, let the chicken breasts cool and then cut them into strips or cubes.
