Kiwi Salad
17/11/2023Kiwi salad is a fresh dish, simple to prepare and very versatile. Here is a simple version that we can then Italianize with a Mediterranean touch.
Ingredients
- 4 ripe but firm kiwis
- 1 tablespoon of honey
- The juice of 1 lemon
- A handful of hazelnuts or almonds of your choice
- Fresh mint for garnish (optional)
Preparation
- Peel the kiwis and cut them into slices or cubes, depending on your preference.
- In a bowl, mix the lemon juice with the honey until they form an emulsion.
- Pour the kiwi into the bowl and gently mix to dress the fruit with the lemon and honey emulsion.
- Lightly toast the hazelnuts or almonds in a pan without adding oil, then let them cool and roughly chop them.
- Add the chopped hazelnuts or almonds to the kiwi salad.
- Garnish with fresh mint leaves if desired for an extra touch of freshness.
To give an Italian touch to the recipe, we could add some fresh cheese such as buffalo mozzarella or burrata cut into small pieces, which with the sweet-tart kiwi creates a delicious contrast of flavors.
