Ingredients
- 4 eggs at room temperature, with yolks and whites separated
- 150 g sugar
- 1 tablespoon water
- 125 g melted and cooled butter
- 115 g 00 flour
- 1 pinch of salt
- 500 ml lukewarm milk
- 2 tablespoons instant coffee (or very concentrated espresso)
- 1 tablespoon unsweetened cocoa powder, for dusting (optional)
- Powdered sugar, for decorating (optional)
Preparation
- Preheat the oven to 150 °C and butter a square or rectangular pan about 20-24 cm on each side.
- In a bowl, beat the egg yolks with the sugar and water until you obtain a light and frothy mixture.
- Incorporate the melted butter into the yolk mixture and stir well.
- Add the sifted flour and continue mixing until fully combined. Do not worry if the mixture looks thick at this stage.
- Dissolve the instant coffee in the lukewarm milk, then slowly pour the milk into the bowl, continuing to stir until you obtain a homogeneous mixture. If you prefer to use espresso, make sure it is strong and lukewarm at the time of mixing.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the beaten egg whites into the batter, being careful not to deflate them. The final mixture will be quite liquid; this is normal.
- Pour the mixture into the prepared pan and bake for about 50-60 minutes or until the cake is golden and firm to the touch. You will notice that the top layer will be quite soft at the end of baking, but it will set once cooled.
- Let the cake cool slightly in the pan, then refrigerate for at least 2 hours before slicing.
- When serving, dust the surface with unsweetened cocoa and powdered sugar, if desired.
