Mediterranean Gnocchi

- Add the cut cherry tomatoes, pitted black olives, and capers. Let cook over medium heat for about 10 minutes, until the cherry tomatoes start to break down, forming a light sauce.
- Meanwhile, bring a pot of salted water to a boil for the gnocchi. When boiling, cook the gnocchi following the instructions on the package; they are usually ready when they float to the surface.
- Drain the gnocchi and add them to the pan with the Mediterranean sauce. Stir gently to coat the gnocchi in the sauce.
- Turn off the heat and add the hand-torn basil leaves and crumbled feta (or the salmoriglio, if using that option). Adjust salt and pepper to your taste.
- Serve immediately, plating the gnocchi with a drizzle of raw olive oil for a finishing touch.
